Plated Dinner Menu for the Retiree Gala
Participants will get to choose one of the following options:
- Minnesota Wild Rice Stuffed Chicken: chicken breast filled with cream cheese, scallions, mushrooms, and cranberries served over arugula
- Grilled Pork Tenderloin (GF): garlic and herb marinade, creamy polenta, and seasonal vegetables
- Roasted Cauliflower Romesco (vegan): roasted cauliflower steak, romesco puree, toasted pepitas, polenta, and fresh herbs
- Classic leafy green salad (for everyone)
- Vanilla cheesecake with berries (for everyone)
